Coffee Grinder Grind Speed

Grind speed usually refers to a coffee grinder's throughput—the mass of coffee it processes per unit of time, commonly expressed in grams per second. It is useful for workflow and capacity planning, but it should not be confused with burr rotational speed, which is measured in RPM.

What determines grams per second?

Burr diameter, burr geometry, motor power and torque, rotational speed, grind setting, bean density, roast level, and feed rate can all change throughput. A grinder that processes 5 grams per second at a coarse setting may be substantially slower when grinding fine enough for espresso.

Why commercial cafés care about grind speed

During a rush, seconds matter. A grinder that doses 18 grams in two seconds can support a different workflow than one that takes eight seconds, particularly when multiple groups are running. But café capacity still depends on barista workflow, dosing accuracy, heat management, and whether the grinder can sustain repeated cycles without overheating.

Faster does not automatically mean better flavor

Throughput is not a cup-quality score. High speed can be valuable, but burr geometry and particle distribution have a more direct relationship to how the coffee extracts. Some grinders intentionally operate at lower burr speeds or use slower feeding to influence particle production.

How to compare grinder speed fairly

Compare the same dose, coffee, and approximate grind range. Manufacturer specifications may be measured under different conditions, so a single grams-per-second figure can be misleading if the test method is not stated.
