      Start with the busiest 15-minute period. Multiply expected transactions by the share containing an espresso-based drink, then multiply by four to create an hourly-rate planning estimate. Add realistic allowance for remakes and near-term growth. This is a demand estimate—not a guaranteed machine rating.

      Next, break that demand into:

      • espresso-only drinks versus steamed-milk drinks;
      • single versus multiple espresso recipes and grinders;
      • cup sizes and milk pitcher cycles;
      • mobile, walk-in and drive-through orders arriving at the same time;
      • number of trained baristas who can work the station safely.

      A smaller shop can have severe peaks, while a larger shop with steady traffic may not need the same platform. Size for the queue you must clear.

      Balance every station in the workflow

      • Grinders: size burrs, motors, dose consistency and number of coffees for the peak; include backup planning.
      • Puck prep: provide ergonomic distribution and tamping space or evaluate an automatic tamper.
      • Milk: place refrigeration, pitchers and rinser so baristas do not cross each other.
      • Water: test chemistry, specify treatment and track cartridge capacity and replacement.
      • Utilities: verify circuit, plug or hard-wire, supply pressure, fittings, drain and ventilation from current documents.
      • Service: identify a qualified local technician, stock routine cleaning supplies and schedule preventive maintenance.
      • Continuity: define how the business will operate if one grinder, group or the entire machine is unavailable.

      How many drinks per hour can a machine make?
      There is no universal number. Manufacturer tests, recipes and operator workflows differ. Evaluate espresso cycles, steam demand, recovery, grinders and staffing against your own peak menu.

      Is volumetric control better for high volume?
      Volumetric dosing can free barista attention and standardize the stop point. Manual or gravimetric systems may be preferable for other quality programs; choose around training and workflow.

      How much capacity headroom is sensible?
      Enough to absorb realistic rush variation, cleaning and near-term growth without creating unnecessary cost or utility demands. Document the assumptions rather than buying from a vague “high volume” label.

      What protects uptime?
      Correct water treatment, daily cleaning, preventive maintenance, local parts and service access, plus a backup plan for the grinder and brewing station.
