Brew for sweetness and clarity
For pour-over, start with 20 grams of coffee and 320 grams of filtered water. Use a medium grind and water around 200–203°F. Bloom with about 60 grams for 30–45 seconds, then pour steadily in stages while keeping the bed evenly saturated.
Taste after cooling slightly. If the cup seems sharp and thin, grind finer or raise temperature modestly. If the finish becomes drying, reverse the grind change or reduce agitation. Drawdown time helps explain changes, but it should not replace sensory evaluation of sweetness, body and finish.
For automatic drip, scale the same 1:16 ratio to 30 grams of coffee and 480 grams of water. For more body, try French press at 30 grams to 500 grams of water with a medium-coarse grind and four minutes of immersion, then decant.
A consistent grinder such as the Turin DF54 grinder gives whole-bean buyers fine control over extraction. Grind numbers do not transfer directly between machines, so keep notes on dose, water, time and taste.
Storage and roast comparisons
Choose 12 ounces for a first bag, one pound for regular brewing or five pounds for shared, high-volume use. Whole bean provides flexibility across methods; ground is practical for drip, while coarse ground suits immersion. Large bags benefit from portioning into airtight containers.
Keep coffee sealed away from heat, moisture and light. Light roasts can benefit from rest, but no exact degassing window is supplied. Use the roast date and Bendix guidance when available and avoid judging freshness only by the size of the bloom.
Water chemistry can be especially noticeable in a lighter roast. Use filtered water that is neither distilled nor strongly alkaline, then keep that water source constant while adjusting grind. Taste the cup warm and again after cooling to better judge sweetness and finish.
