A delicate certified Mexican light roast
Bendix Mexico Light Roast is described with chocolate and honey notes, delicate flavor and a body that falls between light and medium. The lighter roast development makes it distinct from Bendix's separately listed Mexico Dark Roast, while the chocolate direction gives the cup a familiar anchor for customers who do not want an aggressively fruit-led light roast.
Bendix identifies the coffee as Fair Trade Organic certified. Mexico is the documented origin, but the product does not name a state, region, farm, cooperative, producer, cultivar, elevation, harvest or post-harvest process. Those details are not inferred from the certification or country. Chocolate and honey are supplied tasting notes, not listed flavoring ingredients.
Available options include whole bean, Ground and Coarse formats in 12-ounce, one-pound and five-pound bags. Whole bean provides the best control over extraction; Ground is convenient for suitable drip brewers, and Coarse is intended for immersion methods.

Brew for sweetness without losing clarity
For pour-over, begin with 20 grams of coffee and 320 grams of filtered water. Use a medium grind and water around 200–203°F. Bloom with roughly 60 grams for 30–45 seconds, then finish with even pours that wet the bed consistently. Taste at several temperatures before adjusting because honey-like sweetness may become clearer as the cup cools.
If the coffee is thin and sharply sour, increase extraction with a slightly finer grind or modestly hotter water. If the finish becomes drying, reverse the grind change or reduce agitation. Record drawdown time, but do not force a particular time when the cup already tastes balanced.
For automatic drip, scale the same 1:16 ratio to 30 grams of coffee and 480 grams of water. French press can add texture: use 30 grams to 500 grams with a medium-coarse grind, steep four minutes and decant after the grounds settle.
The Turin DF54 grinder lets whole-bean buyers adjust particle size in small steps. Grinder settings are not universal, so keep notes on dose, water, grind and taste rather than copying a number from a different machine.
Freshness, water and roast comparisons
Choose 12 ounces for a first bag, one pound for a regular household routine or five pounds for higher-volume service. Portion bulk coffee into well-sealed containers. Ground coffee has more exposed surface area and loses aroma faster, so match format and bag size to realistic consumption.
Store coffee away from heat, moisture and sunlight. Degassing after roasting can change bloom and flow, but no exact rest window is specified. Use the roast date if supplied and adjust grind gradually. Consistent filtered water is also important; distilled or strongly alkaline water can distort extraction and perceived acidity.
Compare this lighter profile with Bendix Mexico Dark Roast using the same brewer and ratio. That side-by-side separates roast development from country of origin more clearly than the labels alone. The Specialty Coffee collection includes additional certified and origin-focused coffees.
