What Is a Coffee Cherry? Anatomy
Coffee begins as a fruit. The familiar “coffee bean” is actually the seed found inside a coffee cherry, the fruit produced by coffee plants. Understanding the cherry makes many other coffee terms—washed process, natural process, honey process, parchment, mucilage and peaberry—much easier to understand.
What is inside a coffee cherry?

Why are there usually two beans in one cherry?
Most coffee cherries develop two seeds with flat sides facing each other. Occasionally only one rounded seed develops. That seed is called a peaberry. Peaberries are often separated during dry milling because their shape and size differ, but they are not automatically better or worse in flavor.
What does a ripe coffee cherry look like?
Color depends on variety. Many cherries ripen red, while some mature yellow or orange. Ripeness is more important than a specific color. Under-ripe fruit often has less developed sugar and can contribute green, astringent or sour character; overripe fruit can ferment excessively or become more difficult to process cleanly.
Selective hand picking allows producers to harvest ripe cherries in multiple passes, while strip picking removes a broader range of ripeness at once. Mechanical harvesting can also produce excellent coffee when followed by good sorting.
How does the cherry affect coffee flavor?
The seed develops inside the fruit, so plant health, variety, climate and ripening all influence its chemical composition. After harvest, the producer decides how much of the fruit remains around the seed during fermentation and drying. That processing choice can strongly affect aroma, sweetness, acidity and fruit character.
What happens to the cherry after harvest?
Three major processing families are common:
- Washed: skin and pulp are removed early, and remaining mucilage is removed by fermentation, mechanical action, washing or a combination.
- Natural: the whole cherry dries around the seed before the dried fruit is removed.
- Honey: the cherry is depulped, but some mucilage remains on the parchment during drying.

Is cascara the coffee cherry?
Cascara is the dried fruit material from coffee cherries, not the green coffee seed itself. Depending on processing and local practice, the dried skins and pulp may be prepared as a tea-like beverage. “Cascara” in coffee should not be confused with cascara sagrada, an unrelated herbal laxative.
From cherry to cup
The basic path is: flowering → cherry development → harvest → sorting → processing → drying → dry milling → green coffee storage → roasting → grinding → brewing. Every step can preserve or damage quality.
That is why a good cup is never created by the brewer alone. The espresso machine or coffee brewer is the final stage of a much longer agricultural and processing chain.
