Processing describes how producers remove fruit and dry coffee after harvest. Washed, natural, and honey methods can influence fermentation, sweetness, fruit character, and consistency. They create tendencies rather than guarantees; variety, elevation, climate, fermentation control, drying, and roasting remain equally important.

Washed process

In washed coffee, most fruit is removed before drying, and fermentation or mechanical methods help clean remaining mucilage. Washed coffees are often associated with clarity, structured acidity, and transparent origin character.

For brewing, begin with a balanced recipe and enough extraction to develop sweetness. A clarity-oriented grinder can highlight floral and citrus notes, but very high extraction may expose dryness if the roast is not well developed.

Natural process

Do not confuse co-fermentation with conventional processing

Some coffees are fermented with fruit, spices, yeast cultures, or other inputs. These can create vivid flavors, but buyers increasingly care about disclosure.   • How was the lot dried and stabilized before export?
  • Does the flavor description distinguish inherent coffee character from added inputs?
