Why speed can change grinding behavior

Lower RPM

Higher RPM

There is no universal espresso RPM

A setting that works well for one 64 mm flat burr grinder cannot be transferred automatically to another grinder with different burr diameter, geometry, motor control, carrier design, or feed path. Even the same grinder may prefer different RPM for different burr sets.
