Turin Legato V2 vs De’Longhi La
The Turin Legato V2 and De’Longhi La Specialista Arte Evo both involve hands-on espresso preparation, but they organize the equipment differently. The Legato needs a separate grinder; the Arte Evo EC9255M integrates grinding and adds a rapid cold-coffee mode. Neither should be mistaken for a fully automatic latte machine.

Identify the model before comparing specifications
Use the De’Longhi EC9255M support center for the Arte Evo manual and setup guide. La Specialista is a family name, so controls from a Touch, Prestigio or another version should not be assigned to the Arte Evo. Regional accessories and electrical details also need the matching documentation.

Separate grinder or integrated station?
The Arte Evo keeps grinding and brewing in one appliance. That can simplify a first setup, but you still need to adjust the grind for your coffee and verify the dose. An integrated dosing setting is not a guarantee of identical ground mass when beans or grind size change.
The Legato lets you choose a grinder for your preferred workflow, including frequent bean changes or detailed espresso adjustment. It adds another purchase and a separate footprint. Compare the complete price with the grinder, scale and basic cleaning supplies included.
Heating and temperature control
The Legato V2 product page specifies a 550 ml stainless brew boiler plus a separate steam thermoblock. It is not a conventional two-boiler machine. The Arte Evo should not be assigned an unsupported brass-boiler capacity or described as having no temperature control simply because its interface differs.
User-selectable temperature settings and a PID label are not interchangeable descriptions. The useful questions are what the owner can adjust, how the machine prepares for a shot and how it handles the next milk drink. Let the portafilter and cup warm as directed; heater readiness alone does not establish the temperature of every component.
Manual milk preparation on both machines
You control pitcher position and milk texture on both setups. A steam-wand feature name does not mean the machine automatically prepares the full drink. Use an appropriate pitcher volume, introduce air deliberately and clean the wand immediately afterward. Our milk-steaming guide covers the basic technique.
What the cold-coffee feature means
The Arte Evo’s rapid cold-extraction option is a programmed process. It is not the same method as steeping coarse coffee in cold water overnight, and its result should be judged on its own terms. On the Legato, espresso can be combined with ice and cold milk, but that remains an iced espresso drink. Our cold brew versus iced coffee guide explains the distinction.
Maintenance, accessories and the buying decision
Use each model’s own cleaning and descaling instructions. Do not assume baskets or portafilters fit because they look similar, and do not copy an accessory diameter from an unrelated comparison table. Check water requirements, local service arrangements and clearance for refilling.
Choose the Legato if separate grinder selection and direct brew adjustment are priorities. Consider the Arte Evo if you prefer an integrated station and expect to use its drink programs. Both still reward consistent preparation and tasting. See the Legato V2 guide and Barista Pro comparison to compare another manual-steaming, integrated-grinder option.
