How to Switch a Single-Dose Grinder Between Espresso and Pour-Over

Single-dose grinders make it possible to use one machine for espresso and pour-over, but the workflow is not as simple as turning the dial back and forth. Large setting changes can leave old grounds behind, lose calibration, or cause the burrs to tighten with beans trapped between them.

Create reference points

Dial in espresso and record the collar position. Then dial in your usual pour-over and record that position. A photograph and written note are more reliable than memory. Use the same zero reference and confirm it only according to the grinder manual.

Move coarser after espresso

Going from espresso to filter is generally straightforward. Run the chamber empty, move to the recorded coarse setting, add the filter dose, and grind. A small purge may be appropriate when flavor contamination matters.

Move finer with care

When returning to espresso, clear the chamber first. On many grinders it is safer to run the motor while making a large movement finer so trapped fragments do not bind the burrs. Follow the manufacturer's directions for your model.

Account for exchange

Low retention does not mean that every particle exits. A small quantity may remain in the chute or around the burrs and mix with the next dose. Bellows can help, but aggressive pumping can force dust into areas where it would not normally travel.

Choose burrs for mixed brewing

A versatile geometry such as 64 mm Cast Lab Sweet can balance espresso and filter use. A highly espresso-focused burr may make excellent shots but produce more fines for pour-over; a filter specialist may create lower-body espresso that demands advanced recipes.

Models suited to switching

The DF54, DF64 Gen 2.7, and DF64V Gen 3 all support single-dose workflows. The best choice depends on burr options, counter space, and how frequently you switch.

When two grinders are better

If you make espresso and filter coffee every day, two dedicated grinders save time and protect carefully dialed settings. A compact second grinder can be more practical than repeatedly moving one adjustment collar across its full range.

Build a two-point map before you switch

A stepless dial has no universal espresso or filter number. Burr touch, calibration, thread position, bean density, and grinder revision all affect the mark. Establish two references with the same coffee: your normal espresso setting and a dependable pour-over setting. Photograph the pointer straight-on, note the number and rotation, and record the recipe beside it. “One full turn plus 18” is more useful than “somewhere coarse.”

Why moving finer is the risky direction

When beans or fragments remain between the burrs, tightening the gap can trap them and load the adjustment mechanism. Many electric grinders should be running while making a large move finer, but the manual is the authority. Never force a collar that binds. Stop, return coarser, clear the chamber, and investigate. The chirp point is a mechanical reference, not an espresso target.

Exchange retention is the hidden variable

A grinder can return 18.0 grams from an 18.0-gram dose while still retaining some of the new coffee and releasing an equal mass of old coffee. That is exchange retention. It matters when crossing from a dark espresso roast to a delicate washed filter coffee or from caffeinated coffee to decaf. A small purge can improve flavor separation, but purging blindly after every movement wastes coffee.

A repeatable espresso-to-filter workflow

  1. Finish the espresso dose and run the chamber empty.
  2. Use the normal, gentle bellows routine—do not pump until dust appears.
  3. Move directly to the recorded filter reference.
  4. Grind a small purge only if the flavor contrast is large or the grinder exchanges noticeably.
  5. Grind the filter dose and brew with a known recipe.
  6. If drawdown is unexpectedly slow, change grind before increasing agitation.

A repeatable filter-to-espresso workflow

  1. Clear the filter dose and verify the chamber is empty.
  2. With the motor running if the manufacturer instructs, move toward the espresso reference without forcing the mechanism.
  3. Grind a small purge to clear coarse exchange and establish normal chamber fill.
  4. Dose the basket, distribute, tamp, and pull to a weighed target yield.
  5. Make one small grind correction. Do not change dose, temperature, and yield simultaneously.

Keep a dial-in log that survives coffee changes

Record grinder, burr set, coffee, roast date, dose, yield, setting, brew temperature, and result. The absolute number will change as coffee ages, but the distance between espresso and filter references often remains useful. Photos help when collars have multiple rotations. A removable piece of tape can mark a home zone, provided it does not interfere with movement or cleaning.

RDT, static, and bellows consistency

A tiny Ross Droplet Technique mist can reduce static in dry conditions, but water near a grinder requires restraint. Use only the amount recommended for the workflow and never spray the burr chamber. Choosing a mixed-use burr

A balanced burr such as 64 mm Cast Lab Sweet can cover both methods without pushing either to an extreme. A Multi-Purpose profile may make outstanding filter coffee but yield thinner modern espresso. A High Uniformity profile may make comfortable espresso but more fines in pour-over. Choose the compromise you actually want.

Which single-dose platform?

The compact DF54 is a practical mixed-use entry point. The DF64 Gen 2.7 adds a broad 64 mm burr ecosystem. The DF64V platform adds variable-speed experimentation. Regardless of model, repeatable adjustment and low exchange matter more than the marketing phrase “zero retention.”

When two grinders are the honest answer

If you pull espresso every morning and brew pour-over every afternoon, a dedicated filter grinder protects the espresso dial-in and reduces purging. Two modest grinders may create a calmer workflow than one premium grinder moved across its entire range twice a day. Use one grinder when counter space, budget, or coffee rotation makes switching worthwhile; use two when preserving time and settings matters more.
