Macrofoam in Steamed Milk: Large Bubbles, Causes, and How to Fix It

Macrofoam is steamed-milk foam with large, visible bubbles and a comparatively dry, separated texture. It contrasts with microfoam, where extremely small bubbles are integrated into glossy, fluid milk.

How macrofoam forms

The most common cause is introducing too much air or keeping the steam tip at the surface for too long. A steam tip positioned too high can repeatedly gulp air, creating large bubbles that never become fully incorporated.

Aerate, then roll

For modern specialty milk texture, add controlled air early in steaming, then position the tip so the pitcher develops a strong whirlpool. This rolling phase distributes bubbles and creates a uniform texture. The milk should look glossy rather than meringue-like.

Pitcher fill and steam power matter

Too little milk in a large pitcher can make the steam jets excessively aggressive; overfilling leaves too little room for expansion. Strong commercial steam power often needs subtler aeration than a small home machine.

Can macrofoam be rescued?

A few surface bubbles can often be removed by tapping the pitcher and swirling firmly. Large amounts of dry foam usually cannot be transformed into proper microfoam after steaming. It is better to correct aeration on the next pitcher.
