Espresso Machine Flowmeters: How Volumetric Dosing Measures Water
A flowmeter is a sensor that measures water movement through an espresso machine, most commonly so a volumetric machine can stop brewing after a programmed amount of water has passed. In traditional commercial designs, the flowmeter does not weigh espresso in the cup. It counts water moving through the hydraulic circuit.
How a common espresso flowmeter works
Many machines use a small chamber containing a turbine or impeller and a magnetic sensing system. As water turns the rotor, the electronics receive pulses. The machine counts those pulses and associates the count with a programmed brew button.
When the stored pulse count is reached, the control board de-energizes the brew valve or pump for that group. This is why volumetric buttons can provide hands-off repeatability in busy cafés.
Volumetric is not gravimetric

The difference matters because not all water measured upstream becomes espresso in the cup. Coffee absorbs water, the puck retains moisture, and machine hydraulics can affect the relationship between flowmeter pulses and beverage yield.
Why programmed volume can drift
Changing coffee dose, grind size, basket, puck resistance, pre-infusion, or recipe can change beverage yield even when the flowmeter stops at the same pulse count. Scale, debris, air, a sticking rotor, wiring faults, or unstable inlet flow can also cause abnormal behavior.
For high-precision specialty workflows, many baristas still place a scale under the cup and treat volumetric dosing as a workflow aid rather than a substitute for checking beverage mass.
Cleaning and service
A flowmeter is part of the machine's water circuit and should be serviced according to manufacturer procedures. If a volumetric button suddenly runs continuously, stops prematurely, or becomes inconsistent across repeated shots, troubleshooting may include the flowmeter, wiring, control board, solenoid, and water supply rather than assuming the programmed dose was simply lost.
