Coffee Puck Explained: Espresso Prep, Flow, and Channeling

A coffee puck is the compact bed of ground coffee held inside an espresso machine's filter basket. Before brewing, the grounds are distributed and tamped into a level bed. During extraction, pressurized water moves through that bed, dissolving flavor compounds while the puck provides most of the hydraulic resistance that controls how quickly the shot flows.

What makes a good espresso puck?

A useful puck is not defined by how pretty it looks after the shot. What matters most is whether the coffee bed gives water a reasonably even path through the basket. Important variables include dose, grind size, distribution, basket geometry, tamping, and available headspace above the coffee.

  • Grind size strongly changes resistance. Finer coffee generally slows flow; coarser coffee generally speeds it.
  • Dose affects puck depth and headspace. A basket that is substantially overfilled or underfilled can become harder to dial in.
  • Distribution matters because dense and loose areas can encourage uneven flow.
  • Tamping should create a level, stable bed. Once the puck is fully compressed, pressing dramatically harder usually contributes less than consistent distribution and a level tamp.

Why channeling happens

If water finds an easier path through one section of the puck, more flow can pass through that area while other areas receive less. This is channeling. The result can combine overextracted flavors from high-flow pathways with underextracted flavors from areas that saw less effective contact.

Channeling can be caused by poor distribution, cracks in the puck, an uneven tamp, inappropriate grind size, basket overfilling, or water-delivery problems. A bottomless portafilter can make severe channeling easier to see, but taste, shot behavior, and repeatability are more important than appearance alone. Headspace and basket fit

Headspace is the space between the tamped coffee and the shower screen. Too little headspace can allow the puck to press heavily into the screen before brewing, while excessive headspace can alter how the puck wets and expands. The correct dose depends on the basket's actual capacity and the density of the coffee, not simply the number printed on a recipe.

Does a wet puck mean the shot was bad?

No. A soupy or wet spent puck does not automatically indicate poor extraction. Solenoid-valve design, basket depth, dose, headspace, and how quickly the portafilter is removed can all change the puck's appearance after brewing. Likewise, a dry puck does not prove that extraction was even.

Judge the shot primarily by taste, repeatability, flow behavior, and whether the recipe is producing the intended result.
