Coffee Grinder Grind Drift

Grind drift is an unintended change in a grinder's effective grind setting or in the brewing behavior produced by a setting that appears unchanged. In espresso, it often shows up as shots gradually running faster or slower even though the adjustment indicator has not been deliberately moved.

Mechanical drift vs. changing coffee

True mechanical drift occurs when the burr spacing changes because an adjustment collar, carrier, thread, detent, or other component moves under vibration or load. But many apparent cases are not mechanical at all. Coffee itself changes with age, humidity, temperature, and bean density, so the same physical burr gap can require a different dial position from day to day.

Heat can change behavior

Commercial grinders warm during repeated use. Thermal expansion can change dimensions slightly, while warmer beans and grinder components may alter grinding behavior. This is one reason a busy café may need small grind corrections as service progresses.

Burr wear and seasoning

New burrs can change subtly as sharp manufacturing edges settle into normal use. Over much longer periods, wear can reduce cutting efficiency and change throughput or particle distribution. Neither effect should be confused with a collar that physically moves on its own.

How to diagnose grind drift

Mark the adjustment position, weigh the dose and beverage yield, and track shot time under controlled conditions. Use the same coffee when possible. If the grinder's setting marker physically moves or repeatable shot behavior changes quickly without changes in coffee or environment, inspect adjustment tension, carrier play, and calibration.

Do not confuse grind drift with dose drift, where a timed grinder delivers a different mass while the grind size remains essentially unchanged.
