Coffee Grind Uniformity

Grind uniformity describes how consistently a grinder produces particles near the intended size. It is usually discussed through particle-size distribution rather than by looking at individual grounds. A more uniform grind has a narrower distribution, while a broader distribution contains larger proportions of very small fines and larger particles often called boulders.

Why particle size matters

Small particles have more surface area relative to their mass and tend to extract rapidly. Larger particles extract more slowly. A wide distribution can therefore create simultaneous regions of fast and slow extraction. In filter brewing, excess fines can also migrate through the bed and clog filter pores, increasing drawdown time.

Uniformity is not a universal quality score

It is tempting to assume that the narrowest possible distribution always tastes best. Coffee is more complicated. Traditional espresso often relies on a distribution that includes enough fine material to create hydraulic resistance and produce body. Some high-clarity espresso burrs intentionally reduce fines and require different recipes, baskets, flow rates, or pressure.

How burr geometry affects uniformity

Cutting geometry, burr alignment, feed rate, rotational speed, bean properties, and grind setting all influence particle distribution. Burr diameter alone does not determine uniformity. Two 64 mm burr sets can produce very different cups because their teeth and finishing zones are designed differently.

Can you judge uniformity by eye?

Only roughly. Very coarse inconsistencies may be visible, but espresso particles are too small for reliable visual assessment. Laboratory sieving or particle imaging provides better data, while the most practical home-barista test remains repeatable brewing and tasting.
