Honey processing is a method, not an ingredient
In honey processing, some sticky coffee-fruit mucilage remains during drying. The name does not mean honey is added. This lot’s lime, milk-chocolate and herbal notes make it an interesting option for exploring a more processing-forward style; Fractured places it at 4/5 on its own Clean-to-Funky scale.
Brewing guidance
Begin with a filter brew at moderate strength. Look for the balance between lime-like brightness and milk-chocolate sweetness before adjusting the recipe. A simple brewing pattern makes it easier to distinguish the herbal finish from bitterness caused by extraction.
For filter coffee, a useful starting recipe is 20 g coffee to 320 g water (1:16). Use a grind suited to the brewer. If the cup is thin and sharp, try a little finer; if it is drying and slow to drain, try a little coarser. Treat this as a starting point, not a product-specific tested recipe.
