Wet hulling is the defining process in BoJo’s Grade 1 Sumatra Gayo listing. The established store specification names Indonesia’s Gayo Highlands, Ateng P88 with some Tim-Tim, and an elevation range of 1,300–1,800 meters. Light, medium and dark selections give you control over roast preference without changing the listed regional identity.

Choose the roast by its documented flavor direction
The store profile associates light roasting with herbal, woody and cedar references; medium with earthy spice, dark chocolate and molasses; and dark with smoky cedar, chocolate and toasted nuts. Treat those as sensory guides, not added ingredients or a promise that every note will be obvious.
To compare two roasts, brew 20 g of each with 330 g water in the same filter setup. Note the roast on each cup and judge texture as well as flavor. Keep the ratio constant and make only the grind adjustment needed for a balanced extraction.
