What Is Agtron? How Coffee Roast Color Is

Agtron is a color-measurement system widely used in coffee roasting to quantify how light or dark roasted coffee appears. Instead of relying on subjective labels such as “medium” or “dark,” a color meter gives roasters a repeatable numerical reference.

Color measurement is useful for quality control, but it is not a complete description of a roast. Two coffees can have similar color readings and still taste very different because of development, roast time, airflow, heat application, green-coffee properties and cooling.

How roast color is measured

A color meter shines controlled light onto a prepared coffee sample and measures reflected light. Commercial instruments use standardized calibration so readings can be compared within the same measurement system.

On commonly used Agtron scales, higher numbers generally indicate lighter coffee and lower numbers indicate darker coffee. Exact ranges depend on the scale and instrument, so a number should always be interpreted with the method used.

Whole-bean vs ground color

Roasters often measure both whole-bean and ground coffee. Whole-bean color reflects the outer surface. Ground color reveals the average color of the bean interior. The difference between the two can provide useful information about how evenly heat penetrated the coffee.

A large surface-to-interior difference can suggest roast gradients, but it should not be treated as a defect automatically. Bean size, density, process and roast style influence the relationship.

Why grind preparation matters

Ground-sample color depends on particle size, sample depth, leveling and cleanliness of the instrument window. To track production accurately, use the same grinder setting, sample mass, preparation method and meter calibration each time.

What color cannot tell you

Agtron does not directly measure sweetness, acidity, solubility, baked character, scorching, tipping or flavor quality. A roast can hit the target color and still be poorly developed. Likewise, a coffee may taste excellent even if its color differs slightly from a previous batch because green coffee changes over time.

Rate of rise, first crack timing, development time, airflow, gas or power, moisture loss and sensory evaluation all provide information that color alone cannot.

Using roast color in production

A useful quality-control approach is to establish an acceptable color range for a specific coffee or profile, then combine it with roast data and cupping. If color drifts while the curve appears normal, investigate batch size, green-coffee moisture, probe behavior, environmental conditions or equipment cleanliness.
