What Is Aeration in Milk Steaming? How Baristas Add Air for Microfoam

Aeration is the part of milk steaming where air is intentionally introduced into the milk. Baristas often call this stretching because the milk expands in volume as tiny bubbles are added.

Aeration is only the first half of good milk texturing. The second job is to create strong circulation—often called rolling—so those bubbles are broken down and distributed into a glossy, uniform microfoam.

What happens during aeration?

When the steam tip sits just below the milk surface, high-velocity steam draws air into the liquid. The familiar soft tearing or paper-ripping sound is air being incorporated. If the tip is too deep, little or no air enters. If it is too high, large bubbles form and milk may spray.

For most latte-art milk, the barista adds air early while the milk is still cool, then lowers the tip slightly or adjusts the pitcher so the steam remains below the surface and creates a whirlpool.

How much air should you add?

That depends on the drink. A flat white generally uses less expansion and a thinner foam layer. A modern latte uses enough aeration for a silky texture and latte art. A traditional cappuccino may use more foam, although modern specialty cappuccinos are still usually made with fine microfoam rather than dry, spooned foam.

The goal is not a fixed percentage for every café. It is a repeatable texture suited to the beverage and cup size.

Common aeration problems

  • Large bubbles: the steam tip stayed too high above the surface or air was added too aggressively.
  • Thin milk with no texture: the tip was too deep and very little air entered.
  • Dry foam sitting on top: too much air was added without enough rolling and integration.
  • Screeching sound: the tip position may be too deep, too shallow, or poorly positioned relative to the pitcher.
  • Good texture but poor pour: the milk may have sat too long and separated; swirl it before pouring.

A simple steaming workflow

  1. Start with cold milk in a clean pitcher, leaving room for expansion.
  2. Purge condensation from the steam wand.
  3. Place the steam tip just under the surface and slightly off center.
  4. Open steam fully and introduce a controlled amount of air while the milk is still cool.
  5. Move the tip slightly deeper to stop adding air and establish a rolling whirlpool.
  6. Stop at the desired temperature before overheating the milk.
  7. Wipe and purge the wand immediately.
  8. Swirl the pitcher until the milk looks glossy and pour promptly.

Milk type changes the technique

Dairy milk, oat milk, almond milk, and other alternatives foam differently because protein, fat, stabilizers, and dissolved solids affect bubble formation. Barista-formulated plant milks are typically designed to create more stable microfoam, but they may require slightly different aeration time and final temperature.
