Why Water Testing Should Come Before Buying an Espresso Machine

Water testing is easy to postpone because the machine is the exciting purchase. But the test can change the treatment you need, the space under the counter, the installation quote, and the cost of keeping the business running.

Do it while you still have choices. A useful result gives you time to compare complete equipment-and-water proposals instead of rushing to solve a problem on delivery day.

Treat water as part of the equipment decision

The machine's price is only one part of getting it into service. The water system may need treatment, different connections, additional storage or pumping, and a maintenance plan. You cannot price those items reliably from the appearance or taste of a glass of tap water.

Testing does not mean every site needs elaborate treatment. It means the proposed treatment should answer a measured need. Some locations will support a simpler arrangement than others, but that conclusion should follow the results and equipment requirements.

Ask the supplier for a complete proposal: the machine, the treatment arrangement, the installation work, and the expected service items. Comparing those proposals makes the buying decision much more useful than comparing equipment prices alone.

Find out where the proposed water comes from

Identify the supply that will feed the coffee equipment. In an existing building, ask whether there is a whole-building softener or other treatment and whether the espresso branch passes through it.

For a public supply, the utility's water report provides helpful context. The EPA explains Consumer Confidence Reports, including information about the source and regulated contaminants. Ask the utility for its report and for additional water-quality information relevant to your equipment where available.

That report does not replace a test of the proposed connection. Your particular branch may include treatment, and a report may not contain every parameter or current point-of-use result needed for the machine decision.

Ask for a test that answers the equipment questions

Send the testing provider the candidate machines' water requirements. Ask it to identify the appropriate measurements and methods, including hardness, alkalinity, TDS, pH, chlorine, chloride, and any additional parameters called for by those documents.

A general hardness strip does not measure all of those. A TDS meter also does not identify the individual ions responsible for its reading. Our test-strip guide explains why the test needs to match the question.

Where drinking-water safety or source approval is unresolved, have the appropriate laboratory, water professional, and local authority define that work separately. The equipment chemistry panel is not automatically a complete safety assessment.

Label samples so the results mean something

Follow the laboratory's collection instructions, including the correct containers, handling, and timing. Do not assume every test uses the same sampling method.

If a result looks inconsistent, ask the testing provider to resolve it before sizing treatment. A mislabeled pre-filter and post-filter sample can lead to a very different recommendation.

Keep hardness, alkalinity, and TDS separate

These measurements answer different questions. Hardness concerns calcium and magnesium; alkalinity concerns acid-neutralizing capacity; TDS is an overall dissolved-solids measure or estimate. One acceptable reading does not establish that the others are acceptable.

Units matter too. Hardness may be reported in grains per gallon or milligrams per liter expressed as calcium carbonate. Ask the provider to put the results and required limits into matching units rather than comparing bare numbers.

Compare the result with each shortlisted machine

Use the current requirements for the exact model and market version. Ask the supplier to mark which measurements are within range and which need treatment or further investigation.

La Marzocco's Strada S/X installation guide, for example, lists multiple water parameters separately. Its structure shows why a statement such as “the TDS looks fine” is not a complete equipment-water assessment.

Do not assume the most expensive machine has the broadest tolerance or the least expensive one needs no treatment. Make the comparison using the applicable documents and a proposal that meets all of the relevant requirements.

Ask how the test changes the treatment proposal

Have the provider explain the selected treatment process, settings, expected service flow, and estimated capacity at your water conditions. Ask how the final output will be verified after installation.

Testing can influence settings as well as the cartridge choice. Pentair's Claris accessories information, for example, describes a test kit used to assess carbonate hardness and alkalinity for system calibration. The principle is to set up treatment from the measured supply and the applicable instructions.

Also request the space needed for the installed system and cartridge removal. Water planning can affect cabinetry, so share the proposed treatment drawing before the bar is built.

Use the results when comparing locations

Two possible shops can need different water arrangements even when they use the same machine. Compare the installed treatment cost, service access, expected replacement work, and any plumbing changes alongside rent and other build-out costs.

Avoid declaring one site's water “better” from a single number. A site may have a manageable chemistry issue but an expensive supply or drainage problem. Another may need little treatment yet have awkward service access. The useful comparison is the complete workable installation.

Ask each contractor to state the assumptions behind the quote. If water testing is still outstanding, label the treatment allowance provisional rather than treating it as a firm opening cost.

For carts, test the repeatable filling arrangement

A mobile operation benefits from knowing where water will normally be obtained and how it will be handled. Discuss the approved source and system with the local authority and equipment supplier.

Testing one venue's tap does not establish that every future venue will supply the same water. If the business plans to use different sources, have the provider explain how those changes will be managed and checked.

Include the tank, treatment, and delivery arrangement in the assessment. A source sample helps select treatment; a downstream check helps verify the water actually supplied to the machine.

Close the loop after installation

The pre-purchase test informs the design. The commissioning test checks whether that design works. Keep both, along with the equipment requirements, treatment model, settings, and service plan.

Agree on ongoing checks with the treatment provider and re-evaluate after relevant source or system changes. The CDC's water-filter guidance emphasizes matching treatment to the substances being addressed; maintaining that match requires knowing what water the system is receiving.
