The Turin Legato V2 and Ascaso Dream PID both provide adjustable brewing in compact home machines with 58mm portafilters. The Legato uses a brew boiler plus a separate steam thermoblock; the Dream PID uses a single thermoblock. Choose between their heating routines, controls, design and support rather than assuming the higher-priced machine must produce better espresso.

What the heating systems mean
The Legato V2 maintains brewing water in a boiler and uses a separate heat source for steam. The Dream PID manufacturer page describes its thermoblock system and brewing controls. A thermoblock heats water through its path rather than storing a boilerful at brew temperature. Neither description alone proves better temperature at the coffee under every recipe.
Controls that affect the recipe
Both machines offer settings worth exploring after you can repeat dose and yield. Start with a familiar coffee and a sensible baseline. Adjust grind first, then evaluate temperature or pre-infusion changes one at a time. An OPV setting is a pressure limit, not automatic control of every moment of a shot. Avoid using it to compensate for poor puck preparation.
Milk drinks and warm-up
Both require manual texturing, including controlling air intake and pitcher position. A single thermoblock routine and a boiler-plus-steam-block routine can feel different when preparing repeated drinks. Follow the machine’s warming and transition instructions; do not interpret a fast-ready claim as proof that every accessory is fully warm. Cups and portafilters also affect the first drink.
Correct dimensions and model identity
Ascaso lists the current Dream at about 245mm wide, 345mm high and 280mm deep, weighing 10kg. It is not a 30kg machine. Confirm the exact regional Dream PID version, because older Dream models and the Dream One differ. Accessory compatibility needs more than the shared 58mm basket diameter: check the portafilter fit and basket depth.
What makes the price worthwhile?
The Dream’s curved design, finish choices and control layout may be part of its appeal. The Legato is attractive when its feature set and package cost meet the buyer’s needs. Include a capable grinder, water preparation, service support and useful accessories in the total. A taste claim should come from a fair comparison, not simply the price ratio.
