Temperature Probes in Espresso Machines
A temperature probe is a sensor assembly positioned to measure temperature at a chosen point in an espresso machine, coffee roaster, brewer, or related system. The probe may use a thermocouple, RTD, thermistor, or another sensing technology; the physical location and construction are just as important as the sensor type.
Common sensor technologies

Placement determines meaning
A probe in a boiler measures a different condition from a probe mounted in a grouphead or roaster exhaust stream. In roasting, a “bean temperature” probe is influenced by beans, hot air, drum radiation, and metal contact; it is not a perfect measurement of every bean's internal temperature.
Probe diameter and response
A larger metal probe usually has more thermal mass and can respond more slowly. A thin probe may track rapid changes more quickly but can be more sensitive to local airflow or installation details. Neither is universally better.
Immersion and contact
In liquid systems, insufficient immersion can allow stem conduction or surrounding metal temperature to influence the reading. Thread depth, thermal compound where specified, sheath construction, and flow past the probe all matter.
Why replacement probes must match
The controller expects a specific sensor type and electrical characteristic. A physically compatible-looking probe can still be electrically wrong. Use the correct manufacturer part or verified specification.
Interpreting data
Temperature readings are most useful for repeatability within the same system. Comparing raw values between two roasters or espresso machines without accounting for probe location and response can be misleading.
