Strip Picking Coffee

Strip picking is a coffee-harvest method in which most or all cherries are removed from a branch in one pass rather than selecting only individually ripe fruit. It can be performed manually or with mechanical assistance and is generally faster and less labor-intensive than repeated selective picking.

How strip picking works

Workers may pull a hand along the branch so cherries fall onto tarps or collection sheets. In mechanized systems, vibrating fingers or harvesters detach fruit from the plant. The exact method depends on farm terrain, tree spacing, cultivar, and available equipment.

The main tradeoff: ripeness uniformity

Because coffee cherries do not all ripen at exactly the same time, one-pass harvesting can collect green, ripe, overripe, and dried fruit together. That mixed raw material requires effective sorting if the producer wants a more uniform high-quality lot.

When strip picking makes sense

  • Large farms where selective hand labor would be prohibitively expensive
  • Regions with relatively synchronized ripening
  • Flat or mechanizable terrain
  • Lots intended for later optical, density, or ripeness sorting

Strip picking does not automatically mean low quality

Modern producers can combine efficient harvest with sophisticated post-harvest sorting. Flotation, color sorting, optical sorting, hand sorting, and density separation can remove many undesirable cherries or seeds. Final quality depends on the whole production system, not just the first harvest motion.

Compared with selective picking

Selective picking requires repeated passes that target ripe cherries and can provide more uniform input to processing, but it costs more labor. Strip picking trades some field-level selectivity for speed and efficiency.

Impact on processing

Mixed ripeness can alter fermentation rate, sugar availability, drying behavior, and defect risk. Careful receiving and sorting are therefore particularly important before washed, natural, or honey processing begins.
