Pulse Pouring in Pour-Over Coffee
Pulse pouring divides the post-bloom water in a pour-over recipe into several distinct pours separated by partial drawdown. The number and size of pulses influence slurry height, agitation, temperature, and how frequently fresh water reaches the coffee bed.
Fewer, larger pulses
Larger pours generally raise the slurry level more, retain thermal mass, and can create stronger agitation depending on pour rate and height. They also reduce the number of times the bed is disturbed.
More, smaller pulses
Smaller pulses keep the slurry level lower but repeatedly introduce fresh water and disturb the bed. If each pulse begins after substantial drawdown, the coffee bed may be exposed to more temperature variation and repeated fines movement.
Pulse count is not a quality score
Three pours are not inherently better than five, and continuous pouring is not automatically more even. Brewer geometry, filter flow, grind distribution, coffee density, roast level, and kettle technique all change how a pulse pattern behaves.
Using pulses to troubleshoot
- If the brewer is overflowing or slurry level is too high, use smaller pulses or wait longer between them.
- If drawdown stalls late in the brew, try reducing aggressive repeated agitation before grinding dramatically coarser.
- If extraction is low and the brew runs very quickly, a somewhat finer grind or more useful agitation may help.
Keep total water, ratio, and grind stable when comparing pulse patterns. Otherwise it becomes difficult to know which variable changed the flavor.
