Pour Rate in Coffee Brewing
Pour rate is the amount of brewing water added per unit of time, commonly expressed as grams per second in manual coffee brewing. It is one of the most useful pour-over variables because it changes water level, stream energy, agitation, and how quickly fresh water is introduced to the coffee bed.
Measuring pour rate
If a barista adds 100 g of water in 20 seconds, the average pour rate is 5 g/s. A scale with a flow-rate display can show this live, but a normal scale and timer are enough to estimate it.
What a faster pour changes
A higher pour rate generally raises the slurry level and delivers more stream energy. Depending on brewer geometry and pouring height, it can increase agitation and encourage faster bypass or drainage. A slower pour may keep the bed shallower and reduce agitation, but it can also lengthen the total time needed to deliver the recipe.
Pour rate is not the same as drawdown rate. Water may be entering at 6 g/s while leaving the brewer at a completely different rate determined by grind size, fines, filter resistance, coffee swelling, and bed permeability.
Consistency before optimization
For repeatable brewing, first try to make pours similar from cup to cup. If one brew uses a forceful 8 g/s stream and another a gentle 3 g/s stream, differences in agitation may be mistaken for grind or coffee changes.
How to adjust
- If a brew is stalling from fines migration, gentler pours may reduce unnecessary agitation.
- If extraction is low and the bed is barely disturbed, a somewhat faster or more energetic pour can help.
- If water rises too close to the filter rim, reduce the pour rate or allow more drawdown between pulses.
Use pour rate together with grind, ratio, temperature, and total contact time rather than chasing one universal number.
