pH in Coffee & Brewing Water
pH is a logarithmic measure related to hydrogen-ion activity in a solution. Values below 7 are acidic, 7 is neutral under standard reference conditions, and values above 7 are basic. In coffee, pH is discussed both for brewing water and for the beverage itself—but the number is often misunderstood.
pH is logarithmic
A change of one pH unit represents a tenfold change in hydrogen-ion activity, so pH 6 and pH 7 are not separated by a simple one-unit linear difference.
Water pH vs. alkalinity
For coffee brewing, pH alone does not tell you how strongly water will buffer coffee acids. Alkalinity describes acid-neutralizing capacity, commonly driven by bicarbonate in brewing water. Two waters can begin at similar pH values but contain very different amounts of alkalinity and therefore interact differently with coffee acids.
Does lower coffee pH mean it tastes more acidic?
Not necessarily. Sensory acidity depends on the identities and concentrations of acids, buffering, sweetness, bitterness, aroma, temperature, and other compounds. Two coffees with similar measured pH can taste very different in brightness or sourness.
Why pH matters in coffee processing
Producers may track pH during fermentation as one indicator of changing microbial and chemical conditions. It can help document a process, but pH alone does not define when fermentation is “done” or predict a specific flavor.
Equipment water considerations
For espresso machines, corrosion and scaling risk depend on a broader water profile that can include hardness, alkalinity, chlorides, conductivity, silica, temperature, and dissolved gases. A single pH reading should never be used as the only water-treatment decision.
Measuring pH
Test strips can provide rough estimates, while calibrated electronic meters offer better resolution. Meter calibration, probe condition, sample temperature, and storage solution all affect accuracy.
