Patio Drying Coffee: Turning, Layer Depth
Patio drying is a traditional coffee-drying method in which parchment coffee or whole cherries are spread across a prepared flat surface and repeatedly turned as moisture leaves the coffee. Concrete, brick, tile, and other suitable surfaces can be used depending on the origin and mill.
What determines drying speed?
Sunlight is only one factor. Air temperature, relative humidity, wind, coffee layer depth, surface temperature, cloud cover, nighttime conditions, and how frequently the coffee is turned all affect moisture removal. Producers often change layer thickness as drying progresses.
Why turning matters
Coffee touching a hot patio can dry differently from coffee exposed to moving air at the top of the layer. Raking or turning helps redistribute seeds and cherries so moisture loss is more even. It also gives workers opportunities to inspect the lot and remove visible defects.

Risks of poor patio drying
- Uneven moisture between seeds
- Overheating on very hot surfaces
- Re-wetting from rain or dew
- Excess fermentation or mold from slow, humid drying
- Contamination from dirty surfaces or poor handling
How producers know when drying is complete
Experienced producers combine time and tactile experience with moisture meters and, increasingly, water-activity measurements. The goal is stable storage, not simply a dry-feeling surface. Coffee may also be rested after drying so internal moisture can equilibrate before dry milling.
