A reasonable starting point is around 1:15 to 1:17 coffee-to-water by mass, with a medium grind and water suited to the roast. Bloom the coffee thoroughly, then add the remaining water in a controlled continuous or pulse pour. Treat total brew time as a diagnostic rather than an absolute target.
What to adjust
- Drawdown too fast: grind finer or adjust pouring to maintain the desired slurry depth.
- Drawdown too slow: grind coarser, reduce excessive agitation, or check for heavy fines migration.
- Weak flavor: consider a finer grind, stronger ratio, or higher extraction.
- Dry/astringent flavor: check grind, agitation, water, and uneven flow before assuming the brew simply ran too long.
