Milk Stone on Espresso Equipment
Milk stone is a hard residue that forms when milk proteins, minerals, fats, and heat-baked deposits accumulate on dairy-contact coffee equipment. It can build on steam tips, automatic frothers, milk tubes, pitchers, and other surfaces that are not cleaned thoroughly after use.
Why it becomes difficult to remove
Fresh milk residue is relatively easy to rinse away. Repeated heating dries proteins onto surfaces while minerals and fats create a tougher composite deposit. Once hardened, simple water rinsing may no longer remove it.
Where to inspect
Steam-tip holes, the underside of steam tips, automatic frothing chambers, pickup tubes, small air inlets, and pitcher seams are common areas. Even a small restriction can reduce steam flow or alter the air-to-milk ratio in an automatic system.
Use a dairy-system cleaner
Milk-system cleaners are formulated to attack protein and fat residue. Use the concentration, soak time, temperature, and rinsing procedure specified by the cleaner and equipment manufacturer. Espresso backflush detergent and descaler are designed for different soils and should not automatically be substituted.
Prevention is easier
Wipe and purge steam wands immediately after every use, rinse pitchers promptly, and run automatic milk-system rinses as required. Periodically disassemble removable dairy-contact parts for deeper cleaning.
Food safety
Milk residue is not only a performance issue. Dairy-contact surfaces must be maintained hygienically according to manufacturer and applicable food-service practices.
