Mechanical Coffee Dryers

A mechanical coffee dryer uses controlled airflow, heat, and movement to reduce the moisture content of processed coffee more quickly or predictably than open-air drying alone. Common designs include rotating drums, vertical dryers, and systems that circulate heated air through coffee.

Why producers use mechanical drying

Rain, high humidity, limited patio space, and large harvest volume can make sun drying difficult. Mechanical dryers provide a controllable way to continue drying and can improve consistency when they are operated carefully.

Temperature matters

Drying too aggressively can create steep moisture gradients, damage seed structure, or reduce cup quality and storage stability. The goal is not simply to make coffee hot; it is to move moisture from inside the seed to the surrounding air at a controlled rate. Appropriate temperatures depend on process, dryer design, coffee condition, and producer protocol.

Airflow and movement

Air must remove evaporated moisture rather than merely heat the coffee. Turning or tumbling helps expose the lot evenly and reduces pockets that remain too wet. Air temperature, relative humidity, bed depth, and airflow rate work together.

Final moisture and rest

Green coffee is typically dried to a stable storage range rather than to absolute dryness. Producers may temper or rest coffee between drying stages so internal moisture can equalize before final measurement and storage.
