Free-Pouring Latte Art: Milk Flow, Pitcher Height, and Pattern Control
Free pouring is the creation of latte-art patterns solely by controlling textured milk as it is poured into espresso. Unlike etching, the barista does not draw on the surface afterward with a pick or tool. The design forms from the interaction of milk flow, microfoam, crema, pitcher position, and cup movement.
Free pouring starts with milk texture
Good latte-art milk should be glossy, fluid, and composed of very small bubbles. If it is too thin, white foam will not remain on the surface. If it is too dry or stiff, it will drop in blobs instead of flowing into clean lines.
After steaming, swirl the pitcher to keep liquid milk and foam integrated. Waiting too long lets the mixture separate and makes pattern control harder.
Two basic pouring heights
Early in the pour, the pitcher is usually held higher so the milk stream enters beneath the crema and mixes into the beverage. When the cup is sufficiently filled, the pitcher moves close to the surface. At low height, the white microfoam can ride on top and form the visible design.

Foundation patterns
A heart teaches height transition and the final cut-through. A tulip adds controlled pushes or stacks. A rosetta requires rhythmic side-to-side movement while the pitcher advances through the cup. More complex patterns build on these same variables rather than using a completely different technique.
Crema and espresso matter too
The espresso surface should be fluid enough to accept the milk. Very old, thin crema can reduce contrast, while extremely thick or bubbly crema may make clean integration harder. Swirling the espresso before pouring helps create a uniform canvas.
Practice the variables separately
Instead of chasing complicated designs immediately, practice consistent milk texture, then pitcher height, then flow, then cup tilt. A technically simple heart with clean symmetry is a better training result than an elaborate but uncontrolled pattern.
