Espresso Shot Explained: Dose, Yield, Time, Pressure, and Taste

An espresso shot is one brewing cycle in which hot water passes through a compact puck of finely ground coffee under pressure. A useful espresso recipe is defined more clearly by dose, beverage yield, time, temperature, and taste than by the old idea that every shot must occupy a fixed number of ounces or seconds.

The main variables in an espresso shot

Dose is the mass of dry coffee in the basket. Yield is the mass of espresso in the cup. Their relationship creates the brew ratio. Shot time describes how long the extraction takes, but timing conventions vary: some baristas start the clock at pump activation, while others reference first drip.

Grind size is the primary way to adjust puck resistance. Finer grinding generally slows flow; coarser grinding generally speeds it. Dose, basket geometry, coffee freshness, roast level, and puck preparation also influence resistance.

Pressure and flow work together

Espresso is brewed under pressure, but pressure is not an isolated target. Pump output, water flow, and puck resistance interact dynamically. A machine may be capable of 9 bar or more, but a poorly prepared puck can still channel and produce uneven extraction.

Some machines use a flat pressure profile; others offer pre-infusion, declining pressure, flow control, or programmable profiling. Those tools can change how the puck saturates and how extraction develops, but they do not remove the need for good distribution and an appropriate grind.

What should a good shot look like?

Appearance can provide clues, especially through a bottomless portafilter, but visual rules are not absolute. Crema color, tiger striping, and flow thickness vary with coffee, roast, freshness, basket, and pressure. Taste is more important than whether a shot matches a particular visual ideal.

A practical starting recipe

For many modern baskets, an 18-gram dose with roughly 36 grams of espresso in the cup is a useful 1:2 starting point. A shot time somewhere around the traditional mid-20s to low-30s seconds can be a diagnostic reference, but it is not a quality specification. Light roasts, high-flow baskets, turbo-style shots, and lever profiles can all work outside that window.
