Drop Temperature in Coffee Roasting
Drop temperature is the temperature reading recorded when a coffee roaster ends the roast and discharges the beans into the cooling tray. It is one of the most commonly logged roast-profile data points, but it only has meaning in the context of the specific machine, probe, coffee, and roast curve.
Drop temperature is a probe reading, not an absolute bean truth
Roasters usually monitor a bean-temperature probe positioned in or near the moving coffee mass. That probe has thermal lag and is influenced by probe diameter, placement, airflow, batch size, bean movement, and machine construction. Two roasters can produce similar coffee while displaying very different drop temperatures.
For that reason, copying a temperature such as 405°F or 415°F from another machine is not a reliable recipe.
What happens near the end of a roast
After first crack, the coffee continues developing color, aroma, solubility, and roast character. The roaster balances heat application, airflow, rate of rise, elapsed development, and sensory goals before deciding when to drop the batch.
A lower displayed drop temperature often corresponds with a lighter roast on the same machine and coffee, while a higher value often means more roast development. But the relationship is not perfectly linear because time and heat trajectory matter too.
Drop temperature and roast defects
Ending too early can contribute to underdeveloped flavors if the coffee has not received enough effective heat and development. Extending the roast too far can flatten origin character or introduce excessive roast flavor. How to use drop temperature correctly
Use it as a repeatability marker on your roaster. Record batch size, charge temperature, turning point, first crack, heat changes, airflow, development time, drop temperature, and weight loss. Then cup the coffee and connect the sensory result back to the profile.
