Coffee Roast Turning Point
The turning point is the early point on a roast graph where the displayed bean-temperature curve stops falling after charge and begins rising. It is a useful repeatability marker, but it should not be interpreted as the exact moment every coffee bean reaches its lowest internal temperature.
Why does the temperature reading fall after charge?
The roaster and temperature probe are hot before green coffee is loaded. When cooler beans enter the machine, they absorb heat and cool the local environment around the probe. The displayed bean-temperature reading therefore drops sharply.
Why does the curve turn upward?
As heat continues flowing from the roaster into the coffee, the thermal balance shifts. The probe reading reaches a minimum and then rises. This minimum is labeled the turning point by most roasting software.
The probe is not the bean core
Bean-temperature probes measure their own thermal environment. Probe diameter, position, airflow, batch size, bean contact, drum design, and data smoothing all affect the trace. The displayed turning-point temperature is therefore machine-specific.
What can the turning point tell a roaster?
On the same roaster with the same probe setup, a significantly different turning point can signal changes in charge condition, batch mass, coffee temperature, airflow, or machine preheat. It can be useful as an early consistency check.
Do not roast to a universal turning-point target
Copying another roaster’s turning-point temperature is rarely useful because the measurement system may be completely different. Focus on repeatability within your own equipment and how the roast progresses toward yellowing, first crack, and drop.
The apparent turning point can move without flavor changing
Changing probe placement or installing a faster sensor can alter the graph dramatically even if the coffee’s actual heat history changes little. This is another reason the turning point should be treated as a system measurement rather than a universal physical milestone.
