Coffee Roast Curves Explained
A roast curve is a time-based graph of the measurements and control changes recorded during a coffee roast. It is one of the most useful tools for repeatability, troubleshooting, and profile development, but a curve only makes sense in the context of the roaster and probe system that produced it.
What appears on a roast curve?
Common traces and events include bean temperature (BT), environmental or inlet temperature, rate of rise (RoR), gas or electric power, airflow, drum speed, charge, turning point, yellowing, first crack, and drop.

A curve is not a universal recipe
Two roasters can roast the same coffee well with curves that look very different. Probe diameter, placement, drum construction, batch size, burner power, airflow, and software smoothing all affect the graph. Copying a target BT or RoR from another machine can therefore be misleading.
How roasters use the curve
The most valuable use is comparison against your own successful batches. If a later roast loses momentum before first crack, races through development, or responds differently to a gas change, the curve can show where the process diverged. Pair the graph with sensory evaluation rather than treating a visually smooth line as proof of quality.
