Coffee Grinder Dose Drift
Dose drift is a gradual change in the mass of coffee delivered by a grinder even though the timer, grind setting, or nominal dose setting has not intentionally changed. It is especially important with timed commercial grinders, where a fixed number of seconds is expected to produce a repeatable dose.
Why timed dosing is not true weight dosing
A timed grinder controls motor run time, not grams. The amount of coffee produced per second changes with grind size, bean density, roast level, hopper pressure, burr condition, humidity, static, and feed behavior.
Hopper level can change output
As a hopper empties, the force of beans feeding into the burrs can change. Some grinders are more sensitive to this than others. Cafés that need tight dose consistency often keep hopper levels within a repeatable range and verify doses periodically with a scale.
Grind changes affect grams per second
Changing the burr spacing changes throughput. After making a significant grind adjustment, the old timer setting may no longer deliver the same mass. Retained coffee from the previous setting can also affect the first few doses.
Humidity, coffee age, and roast matter
Coffee becomes more brittle or behaves differently as it ages. Dark, oily beans can feed differently from dense light roasts. Environmental humidity influences static and grounds flow. All of these can create slow changes that look like a grinder timer problem.
Burr wear and chute condition
Worn burrs can reduce grinding speed and change particle distribution. A dirty or partially clogged chute can restrict grounds exit and create inconsistent release. Regular cleaning helps distinguish mechanical buildup from normal dose variation.
How cafés manage dose drift
Check ground dose mass at opening, after meaningful grind changes, when a new coffee is loaded, and periodically during service. Adjust the timer only after confirming the grinder is clean and feeding normally.
If weight precision is critical, a grind-by-weight system uses an integrated scale rather than assuming time equals mass. Otherwise, a well-maintained timed grinder can still be highly consistent when the workflow accounts for drift.
