Clever Dripper Brewing Guide
The Clever Dripper is a steep-and-release coffee brewer that combines full-immersion brewing with paper filtration. With the brewer sitting off the server, a valve at the bottom stays closed so coffee and water steep together. When the dripper is placed on a compatible mug or server, the valve opens and the brewed coffee drains through the paper.
This hybrid workflow makes the Clever forgiving: steep time is less dependent on the natural flow rate of the coffee bed than in a conventional pour-over, while the paper filter still produces a relatively clean cup.
A practical Clever Dripper recipe
A useful starting point is 1:16 to 1:17 coffee to water. For example, use 20 g of coffee with 320–340 g of water.
- Insert and rinse the paper filter, then discard the rinse water.
- Add hot water and coffee. Many brewers prefer water-first because it can reduce grounds packing against the filter during the initial fill.
- Stir gently enough to ensure all grounds are wet.
- Cover and steep for roughly 2–3 minutes as a starting point.
- Give the slurry a gentle stir or swirl if needed.
- Place the brewer on the server to open the valve and allow drawdown.
The exact recipe should be adjusted by taste rather than treated as a fixed standard.
What grind size works?
Medium is a useful starting range. If the cup tastes weak, sharply sour, or hollow, grind finer or extend contact. If it tastes harsh or dry, grind coarser or shorten the steep. If the release phase drains extremely slowly, excessive fines may be clogging the paper.
Why water-first can help
Putting water into the brewer before the coffee can help keep grounds from immediately settling into and sealing the lower filter area. It also makes it easy to stir all grounds into suspension. Coffee-first recipes can work perfectly well too; the important part is repeatability.

Clever Dripper vs French press
Both use immersion, but the Clever drains through paper, removing more oils and suspended fines. A French press uses a metal mesh and normally produces more body and sediment.
Common problems
Slow drainage: grind coarser, reduce aggressive stirring, or use a coffee/grinder combination that produces fewer fines.
Weak coffee: increase dose, grind finer, or extend the steep.
Bitter or drying coffee: distinguish bitterness from astringency, then consider a coarser grind or less agitation.
