  2. Distribute the grounds evenly and keep the portafilter rim clean before locking in.
  3. Watch flow and shot time, but make the final decision by taste. Grind finer for a very fast, thin shot and coarser for a choked or overly slow shot.
  4. Texture milk immediately after extraction when making a milk drink, then purge and wipe the wand.
  5. Change only one grind, dose, yield, or temperature variable at a time so the result is understandable.
