Three Central American origins in a medium roast

Surf Blend brings together coffees from El Salvador, Guatemala and Mexico at a medium roast. Clear Lake describes cherry tart, rhubarb, orange peel and a brown-sugar finish with substantial body. Those fruit and sugar terms are tasting impressions, not a statement that the coffee contains added cherries, citrus, rhubarb or sweetener.

The supplier calls Surf low acidity. That is a sensory description, not a laboratory measurement or a medical claim. Coffee still contains naturally occurring acids, and the cherry and citrus impressions can taste lively. Farms, producers, cultivars, elevations, processing methods and blend percentages are not supplied.

Sizes include 12 ounces, one pound, two pounds and five pounds. Customers can select Standard grind, Espresso grind or Whole Bean. The blend is positioned for both filter coffee and espresso, but whole bean gives the best control when fine flow adjustments are needed.

Separate fruit clarity from extraction defects

For filter brewing, try 23 grams of coffee with 370 grams of water, close to a 1:16 ratio. Use a medium grind, wet the bed evenly and keep the pouring pattern consistent. Compare the first hot sip with the cooler cup; fruit clarity and brown-sugar sweetness may become easier to distinguish as temperature falls.

If the result is hollow and sharply sour, move finer to increase extraction. If the finish is drying or the orange-peel note becomes harsh, grind coarser. Drawdown time helps explain the change, but balanced taste is more important than matching an arbitrary number.

For espresso, begin with a dose appropriate to the basket and roughly twice that mass as beverage yield. If a short shot is aggressively sharp, test a slightly longer yield while holding the grind steady. If it runs fast and thin, grind finer. Record dose, yield, time and temperature.

Match package size to actual use

Start with 12 ounces when learning the blend. One or two pounds support regular use, while five pounds is intended for high turnover. At a 23-gram dose, a five-pound bag represents about 98 brews before testing waste. Portion bulk coffee into airtight containers rather than repeatedly opening the full bag.

Keep the active portion sealed away from heat, humidity and sunlight. Degassing affects bloom and resistance, so expect small grind changes over time. Do not refrigerate an open bag where condensation and odors can become problems.
