Grown between approximately 1,550 and 2,200 meters, the coffee is sun dried with the fruit around the seed. That processing style often creates a fuller fruit impression than a washed coffee, making roast development and extraction especially important for clarity.
The coffee is named for Cleophita Canton, known as Muddy, who was born in February 1922 in St. Thomas in the U.S. Virgin Islands. After leaving school in sixth grade—something she later regretted—she made education a priority for her five children. She worked in a hospital cafeteria and retired as an assistant dietitian. A devoted Christian and lifelong coffee drinker, she often said, “Give me my flowers while I am alive.”
