Brew each roast on its own terms

For light or medium roast pour-over, start with 20 grams of coffee and 320 grams of filtered water around 200–203°F. Use a medium grind and a 30–45 second bloom. For dark roast, keep the ratio but try 195–200°F if higher heat produces a rough finish.

A thin, sharply sour cup usually needs more extraction through a finer grind or modestly hotter water. A drying cup often benefits from a coarser grind or less agitation. Track drawdown, but do not force every roast to the same time. Roast development changes solubility, so each choice deserves a separate dial-in.

For French press, use 30 grams to 500 grams with a medium-coarse grind, steep about four minutes and decant. Press brewing can emphasize body, while a paper filter brings greater clarity. Taste black before adding milk when evaluating the dark roast's chocolate direction.

Whole-bean customers can use the Turin DF54 grinder for repeatable filter and immersion adjustments. Ground is convenient when its particle size fits the brewer; no fixed grind is universal.

Choose size and compare with green coffee

Start with 12 ounces when selecting among three roast levels. One pound suits regular home brewing. Five pounds is best for high turnover and should be divided into airtight portions if it will remain open for weeks.

Store sealed away from heat, sunlight and moisture. Degassing can change bloom and flow after roasting. Use a roast date when supplied and make small grind changes as the coffee rests rather than changing several variables together.
