The roaster’s sourcing description identifies Takele Mammo Denbi and his eight-hectare farm in Konga. Those details provide useful context without requiring a long history of Ethiopia’s export system. Natural processing dries coffee in the fruit before the dried layers are removed; here, the roaster describes a combination of berry-like sweetness and floral aromatics.

Brewing guidance

Begin with a V60, Chemex or Kalita Wave to explore the strawberry and jasmine notes. Let a small amount cool before deciding whether the coffee needs a grind adjustment. A finer grind can help a thin cup, while a coarser setting may help when drawdown is slow and the finish is drying.

For filter coffee, a useful starting recipe is 20 g coffee to 320 g water (1:16). Use a grind suited to the brewer. If the cup is thin and sharp, try a little finer; if it is drying and slow to drain, try a little coarser. Treat this as a starting point, not a product-specific tested recipe.
