Henry’s Yemen Mocha Coffee
A traditionally dry-processed Yemeni coffee in which the fruit remains on the seed during drying. A slightly darker roast is used to balance the coffee’s pronounced acidity, developing malty and chocolate-toned depth in a full-bodied cup.

A measured starting recipe
For a filter-brew starting point, measure 20 g coffee and 320 g water, a 1:16 brew ratio by mass. Use a grind appropriate for your filter and keep the bed evenly saturated. If the cup is balanced but weak, increase the coffee dose slightly; if it is sour or dry, adjust extraction through grind size before changing several variables at once.
