Spectrum undergoes a meticulous
natural carbonic maceration process.
The ripe cherries are placed in hermetically sealed, stainless steel tanks, where they remain sealed for 100 hours. CO₂ is injected at regular intervals to establish a controlled and regulated fermentation environment. During this time, the coffee seeds absorb high fruit notes and finer aromatics from the coffee cherry itself. Temperature and pH are frequently monitored to ensure the fermentation variables remain within predefined limits.
