Rim to River connects a Grand Canyon hike with washed coffee from Café Sierra Azul in Chiapas, Mexico. The medium-dark roast is described through dark chocolate, maple-syrup sweetness and a hint of clove.

About this coffee
The supplier describes a roughly 300-member cooperative with many young people and women, organized around sustainable local livelihoods and market access. Organic is part of the source designation. The roaster associates 10% of Rim to River sales with the Grand Canyon Conservancy and credits Mary Love for artwork.
Preparation and selection
Brew 24 g coffee with 385 g water for a small pot. Let chocolate and maple impressions settle before judging the clove finish. If the cup is heavy but dull, a little extra water can improve separation; if it is harsh, address grind and extraction first.
