For espresso, use a dose suited to your basket. An 18 g dose with a 36 g beverage yield is a useful 1:2 starting ratio. Adjust grind size to balance sweetness, acidity and finish. Weigh the output instead of relying on crema volume; keep the dose fixed while dialing in, then test a longer or shorter yield.
