Peru Cajamarca Coffee
Peru Cajamarca is Pegasus’s year-round Peruvian selection, previously sold under the name Organic Peru. Washed coffee grown at 1,300–2,000 meters is roasted medium for a bright, sweet cup. Nuts and chocolate form familiar tasting references, while grape and apple add a fruit-led edge.

Brewing guidance
For drip or pour-over, start with 20 g of coffee and 320 g of water, a 1:16 brew ratio by mass. Use a medium grind and water around 92–95°C. Wet the grounds evenly, then keep pouring consistent. Adjust the grind gradually rather than changing dose, temperature and water amount together.

Yes, that former name is part of the product’s history. The current listing is Peru Cajamarca; a previous name alone should not establish a current certification.
What flavor profile should I expect?
Nuts, chocolate, grape and apple; bright and sweet. These are sensory descriptions; your brewing method and serving temperature affect their expression.
Which size and format should I choose?
12 oz, 2 lb or 5 lb. The current variant menu lists bag sizes only; no grind choice is shown.
How can I adjust the cup’s strength?
Change the brew ratio if the flavor is balanced but the drink is too weak or too strong. Use slightly more coffee for greater concentration. Change grind size when the issue is extraction, such as sourness or a dry finish.
Can I compare it with another coffee?
Yes. Keep coffee dose, water amount and brewer consistent, and taste both at a similar temperature. That makes roast, body and acidity easier to compare without confusing them with different strengths.
How should I keep it fresh?
Keep the coffee sealed away from heat, light and moisture. Grind whole beans shortly before brewing. Choose a bag size that fits your consumption so repeated opening does not expose a large supply to air.
