Hammer Down is RedEye’s coffee blend with a profile that changes meaningfully across its available roast levels. Lighter roasts are described with dried stone fruit and caramel; darker roasts move toward molasses, caramelized brown sugar, dark chocolate and nuts.

Choose a lighter option if the fruit-led description appeals to you, or a darker roast for the deeper sugar and chocolate notes. The roaster markets Hammer Down as a higher-caffeine blend, but no measured caffeine content per serving is provided. Brew dose and serving size also affect how much caffeine ends up in the cup.
Brewing guidance
When comparing roast options, brew equal coffee and water weights first. That makes the flavor differences easier to assess. Only then adjust the strength to suit your preference; a more concentrated brew can otherwise dominate the comparison.

A measured starting recipe
For a filter-brew starting point, measure 20 g coffee and 320 g water, a 1:16 brew ratio by mass. Use a grind appropriate for your filter and keep the bed evenly saturated. If the cup is balanced but weak, increase the coffee dose slightly; if it is sour or dry, adjust extraction through grind size before changing several variables at once.

How do I adjust strength without losing balance?
Change the coffee-to-water ratio when the flavor is balanced but the cup is too weak or concentrated. Use grind adjustments when the problem is extraction, keeping dose and water quantity constant for comparison.
Should I judge the coffee only while piping hot?
Taste again as the cup cools toward a comfortable drinking temperature. Sweetness, acidity, body and finish may become easier to distinguish before you decide how to adjust the next brew.
How should I store the coffee?
Keep it sealed away from heat, light and moisture. Grind whole beans shortly before brewing; keep ground coffee tightly closed between uses to limit exposure to air.
