Foxen Guatemala Pacamara Private Reserve is a medium-roast coffee from Finca La Ceiba, produced by Yosis Hugo Calderón Martínez, also known as Don Hugo. This limited-edition selection brings together a named farm, the large-bean Pacamara cultivar and fully washed processing. Don Hugo credits his grandfather, a coffee producer with whom he spent much of his childhood, for his practical knowledge and work ethic. His producer account describes the challenges of a changing climate and a shrinking agricultural workforce. Finca La Ceiba takes its name from Guatemala’s national tree and carries that family continuity into the identity of this reserve coffee.
Pacamara comes from a cross of Pacas and Maragogipe. Its conspicuously large beans are a cultivar characteristic, not a guarantee of a particular flavor or a reason to measure coffee by volume. Brewing this medium-roast Pacamara
Start with a paper-filter pour-over to establish your own tasting reference. Dose 20 grams of coffee and use 320 grams of water, a 1:16 brew ratio. Begin around 200°F with a medium grind. Wet the grounds with 60 grams of water, allow a 30–45-second bloom, then add the remaining water in two controlled pours.
A drawdown around three minutes is a useful first observation, not a mandatory finishing time. Large beans can occupy more space in a scoop, so use a scale to keep the dose consistent. Evaluate sweetness, acidity, body and finish after the cup cools slightly. If it tastes thin and sharply sour, try a finer grind; if it feels drying, back off the grind or agitation.
For French press, try 30 grams to 500 grams of water with a medium-coarse grind and four minutes of initial immersion. Decant gently and completely rather than leaving brewed coffee on the grounds. Paper filtration emphasizes clarity; a metal filter retains more suspended material and can make the same coffee feel fuller.
