Brewing and extraction guidance

For pour-over, batch brew, or AeroPress, use a scale so dose, brew ratio, time, and beverage yield remain repeatable. For filter coffee, start near a 1:16 ratio—20 grams of coffee to 320 grams of water—with water around 195–205°F. Adjust the grind to manage drawdown: a thin or sharply sour cup usually needs more extraction, while a dry or harsh finish often calls for a coarser grind or shorter contact time.

For espresso, begin around an 18-gram dose and 36 grams of beverage yield in 25–32 seconds. Treat that as a starting point. Roast development influences solubility, and degassing affects puck resistance and crema, so recently roasted coffee may require grind changes as it rests. Taste for balance among sweetness, acidity, body, clarity, and finish instead of chasing time alone.

Choosing a format and storing the coffee

Whole bean provides the most control because grind size can be matched to the brewer immediately before preparation. Choose drip, coarse, or espresso grind only when it matches your equipment; a fixed grind limits later correction if flow runs too fast or too slowly. Keep the package sealed away from heat, moisture, light, and strong odors. Fresh grinding with a consistent Turin grinder makes drawdown adjustments more repeatable; the Turin DF54 single-dose grinder is a compact option for changing dose or coffee.
