Sea State’s Dark Sumatran coffee combines a dark roast with a wet-hulled Indonesian selection. Dark chocolate, walnut, raisin and granola notes form the roaster’s profile, with a medium body and mild perceived acidity.

Brewing and storage
For drip coffee, begin around 20 g coffee to 320 g water with a suitable medium grind. If the cup tastes harsh, avoid automatically grinding finer or increasing contact time. For immersion brewing, choose a grind that suits the method and adjust one variable at a time.

How do I adjust strength without losing balance?
Change the coffee-to-water ratio when the flavor is balanced but the cup is too weak or concentrated. Use grind adjustments when the problem is extraction, keeping dose and water quantity constant for comparison.
Should I judge the coffee only while piping hot?
Taste again as the cup cools toward a comfortable drinking temperature. Sweetness, acidity, body and finish may become easier to distinguish before you decide how to adjust the next brew.
